Curing is an age-old process that involves marinating meats in a mixture of salt, garlic, oregano, and other spices, and then drying them in the sun. Authentic meat curing is a time-honored tradition that is passed down from generation to generation.

The process involves selecting high-quality cuts of meat, such as pork, beef, or goat, and then marinating them in a mixture of salt and spices for several hours or overnight. The meat is then hung to dry for several days or weeks, depending on the desired level of dryness. Being Kentucky Proud means, we only use locally sourced meats.

The resulting cured meats are rich in flavor, with a complex blend of spices and a firm, chewy texture. They can be eaten on their own but elevated when paired with cheese and a bottle of wine. Authentic Cuban meat curing is a labor-intensive process that requires skill, patience, and attention to detail, but the results are well worth the effort.
